Maple Cheesecake

Ingredients
For the Crust
- 1 1/3 cups Graham cracker crumbs
- 3/4 cup chopped maple nuts
- 1/2 cup maple sugar
- 1/3 cup melted margarine
For the Cheesecake Filling
- 2 (250g) packages softened cream cheese
- 1/2 cup maple sugar
- 2 eggs
- 2 tbsp. tablespoon all-purpose flour
- 1 tsp. teaspoon maple extract
- 1/3 cup 5% fat sour cream
For the Topping
- 1/3 cup caramel
- 1 cup maple nuts
- 1/4 cup maple fudge pieces

Instructions
For the Crust
- In a bowl, mix all ingredients together. Press the mixture into the bottom of a 9-inch (23 cm) springform pan. Place in the freezer while preparing the cheesecake filling.
For the Cheesecake Filling
- Preheat oven to 350°F.
- In a bowl, beat the cream cheese, maple sugar, vanilla, and sour cream on low speed until smooth. Add one egg at a time, beating, and add one spoonful of flour at a time, mixing. Pour the mixture over your crust, making sure to smooth it out.
- Bake for 55 minutes or until the top is golden, but the center still jiggles slightly. Let cool. Pour the caramel over the cake and garnish with maple nuts and maple fudge pieces.
