Salmon in a Maple Nut Crust

Ingredients
- 1 lb salmon, cut into 4 fillets
- 1 1/2 cups La Noix d'Érable pecans
- 1 tsp. tablespoon olive oil
- 2 tbsp. tablespoon finely chopped parsley
- 1 1/2 tbsp margarine or butter
- 2 tbsp. tablespoon finely chopped chives
- Salt and pepper

Instructions
- Preheat oven to 350F and line a baking sheet with parchment paper. In a food processor, pulse the nuts into coarse crumbs.
- Brush the top of your fillets with olive oil. In a plate, combine the maple pecan crumbs, margarine, parsley, chives, salt, and pepper. Spread the crumb mixture over the surface of your fillets, pressing lightly.
- Bake for 10 to 12 minutes or until desired doneness.
- Enjoy with a good salad or pasta
