French toast, maple caramel apple and pecan topping

Ingredients
- 2 eggs
- 1/3 cup milk
- 1 tsp vanilla
- 2 slices whole grain or white bread
For the caramelized apples
- 1 apple (McIntosh)
- 1/4 cup maple syrup
- 2 tbsp salted butter
Instructions
- Prepare the French toast batter: Whisk the 2 eggs, milk, and vanilla in a bowl until smooth.
- Soak the bread: Dip the 2 slices of whole grain or white bread into the bowl, ensuring they are well-soaked on both sides.
- Cook the French toast: Cook the slices in a buttered skillet over medium heat until golden brown on both sides.
- Prepare the topping: Dice the 1 apple (McIntosh). In a saucepan, melt the salted butter with the maple syrup, add the diced apple, and simmer until the apple caramelizes.
- Assemble and serve: Spoon the caramelized topping over the French toast. Add Greek yogurt to balance the sweetness, and finish with a generous handful of our maple apple pecans.
Notes: Plain Greek yogurt adds a lovely freshness that balances the sweetness of the topping. Add the maple apple pecans just before serving to keep them crunchy.
